
Ingredients:
2 cups of chopped cattail tops
2 eggs
1/2 cup melted butter, plus 1 tbsp for top
1/2 tsp. sugar
1/2 tsp. nutmeg
1/2 tsp. black pepper
1 cup milk (scalded at 180 degrees F)
Optional: grated Swiss or Parmesan cheese
Instructions:
1.) Mix all the ingredients together in a bowl except for the milk.
2.) Slowly add the milk to the mixture and blend well.
3.) Pour the mixture into a greased casserole dish, top with grated cheese (optional), and add a tbsp of butter.
4.) Bake at 275 degrees for 30 minutes. Enjoy!
